A new juice bar and vegan café, The Butcher’s Daughter, of Apothéke and Pulqueria roots, is said to open in Nolita later this month (not to be confused or associated with the other Butcher’s Daughter, the blog of Employees Only chef Julia Jaksic).
Heather Tierney, co-owner of Apothéke and Pulqueria with her brother Christopher, is opening the new café and juice bar inspired by seasonal, vegetarian and organic cooking with an emphasis on farm-to-table practices and local sourcing. The café will feature a menu by Joya Carlton (formerly of Buvette), and dishes will highlight plant-based interpretations of typical meat dishes; think beet “tartare” and faux cheese and charcuterie. Tierney has also pulled Brandi Kowaksi, manager at ABC Kitchen and ABC Elixir Bar, to captain the juice bar as “head juiceologist.”
